100% Italian meat and a controlled supply chain
Even though the cuts of meat arrive at our plant ready to be processed into various cold cuts, we do not lose sight of the origin of the raw material.
We only work with a number of selected breeders and butchers who follow the best protocols.
We personally and actively follow controlled and certified organic, antibiotic free and animal welfare supply chains. We periodically check their work with scheduled controls to be 100% sure that standards are always maintained at a level of excellence.
All production is processed and matured in our two plants so that our experts have control over every single phase.
Only the best cuts of meat are selected and enter our plants.
We only use natural spices to flavour our products. Each charcuterie product has its own specific mix created following the ancient, secret recipes of the founders.
All processing is still done by hand in an artisan manner. Each person has a specific role: there are those who take care of the pancetta, those who tie the culatello and the spalle di San Secondo, those who knead the salami.
Each phase of the maturing process has its own peculiarities that our operators know how to manage in the best possible way.
This means that every product that arrives on the table is in perfect condition. Seasoning still takes place naturally, without starter cultures, using only the collaboration of a special bacterial microflora found in the seasoning rooms.
