Autumn at Cavalier Umberto Boschi brings news to the “family”: a new salami, Passita, is born.
After much study, the result has finally been approved and is now ready to make its debut on our customers’ shelves. La Passita is a delicious “hybrid” in that it is more mature than a sausage but less so than a traditional salami.
It is a typical product of Romagna, its recipe is an old peasant tradition, which takes its name from the fact that its seasoning is very short, it is commonly said that it is ‘softened’. “We decided to start production,” confirms the sales office in Italy, “because it has those characteristics, sweetness and delicacy, that are fully in line with the range of products that our customers expect to be in our range”.
Like all other Cavalier Umberto Boschi salamis, Passita salami is produced using only Italian meat, tied with natural fibre twine, gluten-free and lactose-free. Its texture is soft thanks to the short maturation period, and it has a particularly sweet and captivating taste. It is perfect to be cut and eaten at any time of the day: for a quick snack, an aperitif with friends or to be an unfailing presence in a classic platter of mixed cold cuts served as an appetiser.
