We bring the best traditional Salami to your table

Cavalier Umberto Boschi was born and became famous for the processing and maturing of Felino salami, to which Strolghino and Bocconcini were later added. 

Our curiosity has led us to successfully experiment with the production of other traditional Italian salamis togliere S. You will be able to taste our classics such as Milano salami, Hungarian salami and Napoli salami, as well as more special products such as Spianata piccante and Salame Contadino

We haven’t stopped and every year we expand the range with new flavours.

HOW WE PRODUCE THEM

Fresh meat is personally selected by our operators; excess fat is removed before being minced and seasoned with salt and spices. Each salami has its own perfect mix that gives the product its special flavour.

HOW WE MATURE THEM

Once the salami are bagged and hung on the frames, they pass into the care of our experts in the maturing department, who patiently and expertly move the salami and change the temperature and degree of humidity to ensure the uniform maturing of each individual piece.

Did you know...?

There are many stories about the origin of the name “Strolghino”. We like this one: the name derives from strolag or strolga, which means ‘astrologer’ or ‘soothsayer’ in Emilian dialect. This name derives from the fact that this little salami was used to predict the progress of the seasoning of cured meats with a longer maturation period (culatello in particular) that were destined for sale.
